Recipe – Glazed Venison Meatloaf

I am always on the lookout for recipes that are simple to make, hearty, and of course, delicious. I also love recipes that make great leftovers. This recipe for meatloaf fits that bill perfectly. It can be made with ground venison, elk, or beef. Pair it with your favorite starch (like honey roasted potatoes) and salad or veggies and you have an easy meal and maybe even the makings for a sandwich the next day.


1 cup ketchup

2/3 cup brown sugar

2 tbsp. lemon juice

2 tsp. dry mustard

2 lbs. ground venison

3 slices bread, chopped finely

1 egg, beaten

ΒΌ cup diced onion

1 pkg. onion soup mix

3 tbsp. lemon juice


Preheat oven to 350 degrees F.

In a small bowl, combine ketchup, brown sugar, 2 tbsp. lemon juice and dry mustard until smooth.

In a large bowl, combine ground meat, bread, onion, egg, onion soup mix, 3 tbsp. lemon juice, and 2/3 ketchup mixture until well mixed. Form into loaf and place into 9×5 inch loaf pan.

Bake in 350 degree oven for 30 minutes. Pour remaining ketchup mixture over top of loaf. Return to over and bake another 40 minutes. Carefully pour any excess grease or juices out of loaf pan. Serve and enjoy!


Honey Roasted Potatoes


1 lb. red potatoes, quartered

2 tbsp. dry parsley flakes

Pinch salt

Pinch black pepper

2 tbsp. butter, melted

3 tbsp. honey

1 tsp. dry mustard powder


Preheat oven to 350 degrees F.

Cover baking sheet with aluminum foil.

In small bowl, mix parley flakes, melted butter, honey, mustard, salt and pepper. Mix well.

In large bowl, toss potatoes with honey mixture; coat well.

Place potatoes on baking sheet in single layer. Bake in 350 degree F oven, turning after 30 minutes.

Bake 40-60 minutes or until potatoes are tender.
