Venison Lettuce Wraps

When it comes to cooking I always like to take a basic recipe and change things to either make it spicier, more flavorful, or healthier. Everyone has made soft or crispy tacos and has probably used the normal ground beef or venison, beans, cheese, lettuce, tomato etc but I make them a little different. The biggest difference is instead of tortillas or taco shells I substitute lettuce leaves for a dose of veggies

Here is what you need:

1 lb of ground venison (ground wild hog or other wild game can be substituted to your preference)

1 head of lettuce

1 yellow squash

1 green zucchini

1 can of corn

2-3 carrots

2-3 cloves of garlic

1 medium onion (diced)

1 can of Low Sodium Red Kidney Beans (or a can or fresh pot of your choice of beans)

Worchester Sauce to taste (you can substitute your favorite taco seasoning here instead of WS if you choose)

Salt/Pepper to taste

Shredded Cheese

Hot Sauce/Salsa

Start by dicing up the squash and carrots into small cubes or slices, dicing the onion and mincing the garlic. Heat up your skillet and sauté the garlic; then begin cooking the ground venison; add onion, squash, carrots and corn. Add the Worchester Sauce (or taco seasoning) to the mix enough to coat all meat and veggies.

While the meat is cooking, peel off lettuce leaves big enough to use as a taco, rinse, and let dry. Also while the meat is cooking cook your beans in a separate pot.

Cook meat until done and until veggies are soft. Add salt/pepper to taste. Spoon meat mixture and beans into the lettuce leaves; add shredded cheese and salsa for a great flavorful taco!

Recipe can be easily doubled for more servings!
